Shamrockin’ Salad


Here’s a healthy St. Patrick’s Day treat for the little leprechauns!

Shamrockin' Salad

Whole grains, fruits and veggies make a fun and healthy St. Patty's Day plate!


1 whole wheat pita or rice cake

1 serving of precooked, shredded chicken or very low sodium canned tuna

1 tsp each light olive oil and red wine vinegar

1/8 tsp each ground black pepper and onion powder

2 raisins

1 dried cranberry

1 sliver of red apple sliced to resemble a smile

1/4 cup shredded carrots

2 leaves romaine lettuce, washed



wrap or rice cake on a plate.  In a small bowl, combine chicken or tuna with oil, vinegar, pepper and onion, tossing gently.  Spread onto the middle of the wrap to make a face.  Add raisins for eyes, the cranberry for a nose and the apple slice for a mouth.  Arrange the carrots at the bottom of the face to make a leprechaun’s beard.  Tear the lettuce to make two long pieces for a hat brim and 3-4 smaller pieces for the top of the hat.  Arrange these at the top of the face, and serve.
