Day 10 of The Fit Fridge’s Twelve Days of Healthy Holidays spreads comfort and joy with a sweet and savory “Spiced Rice Mix.” For less than five dollars, you can give a healthy side dish packed with whole grain brown rice, sunflower seeds, fruit and spices. Package in a pretty clear glass container, and tie a festive ribbon around the top to complete the gift.
Comfort and Joy Spiced Rice Mix (Makes 1 mix that serves 4-6)
2 C instant brown rice
1 teaspoon powdered maple sugar
1 teaspoon celery flakes
1/2 teaspoon cinnamon
1/2 teaspoon onion powder
1/4 teaspoon dried grated orange peel
1/4 teaspoon cardamom
1/4 teaspoon cloves
1/8 teaspoon ground black pepper
2 tablespoons unsalted, toasted sunflower seeds
¼ C dried cranberries
¼ cup diced dried apples
To make the mix: combine ingredients in a bowl, and store in an airtight container.
Include the following instructions with the mix:
In a saucepan, bring 1¾ C water to a boil. Stir in rice mix; return to boil. Reduce heat to low. Cover and simmer 5 minutes. Remove from heat and stir. Let stand 5 minutes and fluff with a fork.
